Why is this berry called cloudberry?
I myself was interested to know the meaning of the name. I was told several versions, according to one of them the word "cloudberry" came from the Ukrainian word "moroh", which means a swamp, and according to another - from the Russian verb "drizzle". Both versions are quite plausible, because the berry grows in the swamps in the forests, and loves drizzling rains. By the way, in English "cloudberry" will be cloudberry, that is, "cloud berry" or "cloud berry". In the north it is called "amber", and for the rest it is "northern raspberry". Both names are explained appearance cloudberries.

What does she look like?
Cloudberry berries are bright yellow, but almost transparent, most of all similar in structure to raspberries. It changes its color several times, and unlike other berries that turn red as they ripen, unripe cloudberries are dark red, then a little lighter and, finally, amber yellow.

When does she mature?
Cloudberry ripens later than other berries in the northern forests, it can be harvested from about July 20 until the end of August. They collect it by hand, and they are not distracted by individual bushes, but are looking for whole glades, "carpets". At the same time, those who are new to the berry are often mistaken - they pick red berries that attract attention, and then they say that the cloudberry is tasteless, although in fact it is simply immature. To ripen, cloudberries need coolness and moisture, but she does not like severe frosts and heavy rains - she is so capricious. This berry grows in swamps and swampy forests, often next to lingonberries and cranberries. I know that it is brought from the Far East, from Siberia and from the Far North, and it also grows in Finland.

Can we find cloudberries?
In Moscow, it is easier, of course, to find frozen cloudberries. But if you try, walk around different markets, look, then at the end of August you can get this berry somewhere. For some reason, cloudberries are not particularly popular in the central part of the country; they are not yet brought here in large quantities. Maybe someday someone will guess to bring this berry here, because it will certainly be a success.

To choose a good berry, first of all we look at the color. Do not listen to sellers who are trying to sell you red berries. Ripe berries cloudberries should be bright yellow or orange, but not brown, because this means that they are overripe. And the berries should be soft.

Why is this berry interesting for you?
To be honest, before my arrival in Russia, I did not even know about the existence of this berry. Here I was advised to try using it in desserts, and I instructed my chefs to buy some of this berry for me. And I was amazed! It cannot be compared in taste with any other fruit or berry. It was the unique taste of cloudberries - very strong, sweetish, with a barely noticeable sourness - and its aroma that made an unforgettable impression on me. She, like other northern berries, has a slight bitterness, which makes her even more interesting for cooks. Cloudberry is also interesting because it is almost impossible to use it separately, without combination with other products: it has a very tart taste, and the juice is too sour. So it's always interesting to try combinations. various products with cloudberries and discover something new.

What foods do you pair cloudberries with?
Sweet foods are best suited to its slightly spicy taste - with this use, the bitterness of the berry is drowned out, and the taste becomes even more delicate. I like the combination of cloudberries with yogurt, ice cream, whipped cream, coconut, chocolate. Only chocolate is best to choose white. And by no means black - it will turn out too bitter.

Are there any secrets to dealing with cloudberries?
Of course, since the cloudberry is a combined drupe, it consists of slices, each of which has its own bone. So it is very important not to destroy the integrity of these small seeds, not to crush them, otherwise add additional bitterness to the natural bitterness of the berry. Therefore, instead of punching berries in a blender, for example, they need to be rubbed through a sieve. This is what I do when I make cloudberry mousse, it's one of my favorite recipes. By the way, it is easy to cook even at home. We need 750 g of cloudberries, 250 g of sugar, 37 g of sheet gelatin, 500 g of cream and the same amount of some plain yogurt. Rub the cloudberries through a sieve until puree is obtained (about 600 g pitted should remain). Mix the finished puree with sugar and bring to a boil. Gelatin is soaked and diluted in cold water. Add yogurt to cloudberries with sugar, and then pour gelatin into it, mix. The resulting mass must be cooled, and at the end, carefully introduce pre-whipped cream. Amber cloudberries will be the best decoration for this dessert.
