Pine cones are born in spring at the ends of young shoots. At first they are smaller than a pea. When they grow up a little, it is time to collect them for pine honey.

Preparation of "Shishkin's Honey"

To prepare "Shishkin's Mead" adhere to the following proportion:
- pine cones young, green - 75-80 pieces per liter of water,
- granulated sugar - 1 kg per 1 liter of pine infusion.

Add granulated sugar to the broth (from the ratio: 1 kg of sugar per 1 liter of infusion). Next, boil the bumps in the resulting syrup, like regular jam.

Boil pine cones over low heat for at least 1.5 hours.

Pine cones should be collected in the second half of spring and early summer. Depends on the region where the pines grow. Buds should be already formed, but not yet ripe. Green, dense, but easily pierced even with a fingernail.

Sort out the cones from debris and rinse the needles well under cold water. Do not wash them with warm or hot water, as they will immediately begin to secrete resin and become sticky. This will complicate the whole process.

As you sort through the buds, carefully inspect them for any damage or holes. In this case, you came across a cone spoiled by a pest. If you cut it open, you can find it.

Put the sorted and washed cones into a saucepan and pour cold water so that it covers them by 1-1.5 cm. Enamelware should not be used, it will be more difficult to wash it from resin and syrup.

Bring the cones to a boil and simmer for 20 minutes. Then put to cool at room temperature and let it brew for a day.

After a day, a film of resin can be seen on the surface of the water, so the cones should be brought to a boil again. The largest of them can boil and lose their shape, but this is not scary.

Pick out the buds with a slotted spoon or spoon. Those cones that are not boiled soft can be set aside to decorate cans, and the rest should be thrown away.

Strain the syrup through cheesecloth or a fine sieve. Pour into a clean saucepan, bring to a boil and add sugar in parts at the rate of 1 g of sugar per 1 liter of syrup.

Boil the syrup for 2 hours, stirring constantly so as not to burn and remove the foam. They just collect all the excess and unnecessary resin.

Sterilize the jars and put a few cones on the bottom for decoration.

Pour hot jam into jars and close with lids or roll up with a key.
