Kefir pies are like “fluff” - fluffy, soft, magically delicious. Soda dough for fried pies Soda dough pies

Now I will try to describe in detail how to prepare dough for pies using kefir and soda. Both the dough and the pies themselves are very simple to prepare, and the result is always stunning - the pies are tender, light, fluffy and very tasty. I used potato and mushroom filling, but instead you can use cabbage, meat, liver filling - according to your desire and taste.

So, to prepare fried dough pies with kefir and soda, take the products from the list of ingredients for the recipe.

Pour room temperature kefir into a deep bowl and add chicken eggs. For convenience, you can shake them in a separate bowl.

Add salt, add vegetable oil and stir a little. Add baking soda. The mass will begin to make noise, fluff and increase before our eyes.

While stirring slowly, add the twice-sifted flour. Sifting is important!

Add flour in small portions, stirring each time after adding.

When all the flour has gone and the dough is difficult to mix in the bowl, place it on the work surface and continue kneading for another 15-20 minutes.

The dough should not stick to either your hands or the countertop. She will be flexible, obedient and soft. Place it in a bowl, cover with a napkin to rest. And at this moment we will start preparing the filling.

Cut the washed mushrooms into small cubes or in any shape and fry in a minimum amount of oil until golden brown.

Boil the peeled potatoes in salted water and then mash with a fork.

Combine potatoes with mushrooms, add salt and ground black pepper to taste and mix thoroughly.

Cut off 1/3 of the total piece of dough and roll it into a roller. In turn, cut it into small equal parts. Roll each part into a flat cake 5-7 mm thick. Place the filling in the center.

Pinch the edges and then press a little with your palm, giving the shape of the pie. Similarly, make pies from the remaining dough.

Pour vegetable oil into the frying pan and place the pies.

Fry on each side until golden brown over low heat. Place the finished pies on a napkin to remove excess oil.

Fried dough pies made with kefir and soda, prepared according to this recipe, always turn out tender, airy, soft and very tasty.

Bon appetit. Cook with love.

To make delicious and fluffy pies, many housewives, in addition to yeast, add regular baking soda - sodium bicarbonate. Soda dough for pies is the fastest way to prepare open and closed baked goods. If the correct technology is followed, baking with soda is in no way inferior in quality to yeast baking.

Why do you need to extinguish soda?

Sodium bicarbonate itself does not affect the loosening process. Then why is there soda in the dough? When heated during baking, soda in the dough releases carbon dioxide, the bubbles of which help loosen the dough, making it airy and crumbly. If the recipe contains kefir or other fermented milk ingredients, then for a normal leavening process, soda does not need to look for additional components for an acidic environment. Carbon dioxide is released in soda only under conditions of high temperature and acidic environment, which is why the soda must be extinguished before being put into the dough.

If there is little acid, the finished product may have an unpleasant soapy taste. To prevent this from happening, you need to strictly observe the proportions of soda in relation to other components during the preparation process. Since time immemorial, soda has been extinguished with vinegar. This method remains relevant today. But it can only be used if no fermented milk ingredients are added to the dough.

The so-called dough baking powder, which is a white powder added to the dough instead of slaked soda, has gained great popularity among housewives. It contains baking soda, citric acid, and flour. Once in the dough, this ingredient demonstrates an instant reaction. The only contraindication to adding baking powder to the dough is the presence of a fermented milk ingredient in the recipe. Since it already contains acid, its addition can lead to a deterioration in the taste of the finished product.

Dry baking powder must be mixed with flour, since when mixed with water, the reaction will take place only in it, and as a result, carbon dioxide will not enter the dough.

There are a lot of recipes that are prepared on the basis of non-yeast dough: pies with soda, fried, baked, with kefir and whey, without baking and many other options.

Kefir pies

Pies made with soda and kefir have gained great popularity due to the speed of preparation and excellent taste. This type of baking is prepared very quickly due to the instant reaction of kefir with soda. An additional fermented milk ingredient, sour cream, significantly improves the taste of the pies. In addition, they turn out not only tasty, but soft and airy. This dough allows for any filling. In addition, they can be fried and baked. The yield of finished baked goods from the specified ingredients is 20 medium-sized pies.
We prepare the necessary products:

  • wheat flour - 800 g;
  • salt - 0.5. l.;
  • soda - 1 tsp;
  • kefir - 400 ml;
  • low-fat sour cream - 2 tbsp. l.;
  • egg - 1 pc.;
  • vegetable oil - 0.25 cups.

Let's start preparing the dough:

  1. Mix salt with flour and soda.
  2. Separately, heat kefir slightly, add sour cream and stir.
  3. Add the egg to the bowl with kefir and sour cream and mix well. Add flour with salt and soda to this mixture.
  4. Mix everything well. When the liquid disappears, knead the dough by hand until it becomes soft and elastic.
  5. Leave the dough to proof for 20 minutes. Then mash it on a board sprinkled with flour.
  6. Pinch off pieces of dough from the edge, form pies with filling and fry in a frying pan heated with vegetable oil or bake at 1800C for about 30 minutes until browned.
  7. Baking Soda Pie Recipes

Pies made with soda with yogurt or very thin sour cream are especially tasty and fluffy. To prepare the dough you need:

  • butter or margarine - 200 g;
  • curdled milk - 500 ml;
  • baking soda - 1/2 tsp;
  • wheat flour - so that the dough is soft.

Preparing soft dough:

  1. Butter or margarine should be melted. We put salt, soda, and fermented milk product in it. We mix everything well.
  2. Pour in the flour. Then you need to knead the dough until it starts to stick to your hands.
  3. The dough should stand in a warm place for at least half an hour.
  4. To make the pies juicy, you need to roll out the dough thinly and add a lot of filling.
  5. The pies are placed on a greased baking sheet. It is better to let them sit for 10 minutes and then brush them with whipped milk and egg yolk. Thanks to this, the pies will acquire a beautiful golden brown crust.
  6. The oven should be preheated. You need to bake pies with soda at 1800C.

Even beginners in the culinary business can prepare baked goods according to this recipe, since it does not require special skills and knowledge. Soda dough using any fermented milk liquid product is convenient because to use it you do not need to worry about whether this product is expired or not. The longer the period of exposure, the better the fermentation process in the dough occurs. But it is worth remembering that the best ingredients for such baking are kefir and yogurt.

Pizza with soda

One of the most common open-baked options is soda pizza. Today it is difficult to even imagine how many types of these baked goods actually exist. It is prepared with different types of sauces, fillings, and dough. But the fastest pizza is considered to be one that uses baking soda as its dough base.

Classic pizza

For the test you will need:

  10. Sprinkle the top of the pizza with a layer of cheese.
  11. Place in a preheated oven at 180 degrees for 25 minutes.

Soda pizza can be prepared with any topping. It all depends on personal preferences and capabilities. This type of dough is also suitable for sweet fillings, which can be made from exotic citrus fruits. In fact, pizza is not only a versatile product, but also an easy-to-prepare product that does not require much time.

To ensure that the dough always turns out tasty, you need to adhere to the exact recipe and follow some simple rules when preparing it:

  • Soda dough will be tastier if it is prepared from premium flour, to which quicklime soda is added.
  • The dough will become tender and airy if you sift the flour several times before kneading.
  • The finished dough should rise in a warm place without drafts.
  • Margarine and eggs should sit at room temperature for a while before using.
  • You need to knead the dough with soda quickly, no more than 1 minute. With more time, the carbon dioxide produced during the reaction of the fermented milk product with soda will evaporate and the dough will become hard and tasteless.

Pies, pizza, kulebyaka, buns and many other baked goods prepared with soda, if the technology is followed correctly, will be a worthy addition to the recipe book of those housewives who have not yet discovered the amazing properties of this useful and necessary ingredient.

Today I’ll tell you how my aunt taught me to make fluffy dough with soda, which saves in absolutely all cases, even when guests come unexpectedly. If in the old days I made pie in the oven, dumplings, cookies, buns and fried pies extremely rarely, mainly on weekends, now I know amazing secrets that allow me to prepare these and many other delicacies without much time. If you are also short of time, but always want to pamper your loved ones with culinary masterpieces, I suggest taking note of several amazing recipes. They will help you quickly prepare cupcakes, manna, and many other delicacies.

Fried pies are especially popular in my family. I am sure that your loved ones will not refuse fresh, aromatic and soft products with potatoes and other fillings. By cooking them in a frying pan, you will spend a minimum of time. In addition, there is no need to run to the store for groceries, since the dough for pies using soda and water, as well as the filling, are prepared from products that are always available in the kitchen.

To prepare fried pies in water using baking soda, you need to take:

  • flour - 2 cups;
  • sunflower oil - 3 tbsp;
  • plain water;
  • baking soda and salt - 0.5 tsp each;
  • oil for frying.

The pies are prepared as follows:

  1. Pour the specified amount of oil into a glass and fill the container with water.
  2. Take a bowl for kneading dough, pour out the prepared liquid, add soda and salt, and mix everything thoroughly.
  3. Add flour to the solution and knead the dough until it becomes elastic and does not stick to your hands.
  4. Roll the mass into a sausage, cut into pieces (in most cases it turns out to be up to 15 pieces).
  5. Prepare the filling (I make it with apples, so I prepare it in a matter of minutes, if you want to make it with potatoes and other ingredients, take care of them in advance).
  6. Roll out the pieces, place the filling in the center, form into pies and fry on both sides until golden brown.

This dough can be made with both salty and sweet fillings. The result will be incredibly tasty, soft products that increase in size. But if you want to cook them with jam, then pay attention to one nuance - the filling should be soaked in starch so that it does not “creep out”.

Dumplings on kefir with soda

Lush steamed dumplings, and even with berries, are an incredible pleasure. The whole secret of the airiness and lightness of the dough is in soda and kefir. The finished dish looks as if there is yeast in the dough. If you were unable to steam the dumplings, and they constantly “deflated” or did not increase in size at all, I suggest using my tricks.

Prepare the following ingredients:

  • kefir - 0.5 liters;
  • flour - 5 glasses;
  • sugar, salt and soda - 1 tsp each;
  • egg - 1 pc.;
  • vanillin (optional).

here it is, the filling in a broken pie... I love it when the cabbage filling also contains no less quantity of carrots and onions too.

It was in the evening, so the photo is not of very good quality
My assistant daughter Kirochka, happy in anticipation of cooking))

Ingredients
Dough:
2 eggs,
kefir 1 glass,
soda 1 teaspoon,
salt 1 teaspoon,
sugar 2 teaspoons,
vegetable oil 2 tablespoons,
wheat flour - 3 cups or as much as the dough takes
The filling in my case is cabbage:
Cabbage,
carrot,
onion,
salt,
ground black pepper

Let's make the filling.
I shred the cabbage on a shredder, grate the carrots and onions on a coarse grater.
Place all our ingredients in a frying pan, add salt and pepper and simmer until done, maybe browned a little.

While our filling is preparing, we start the dough.
Take kefir, pour it into a bowl, add soda to the kefir (i.e. extinguish the soda), then salt, sugar, eggs, sunflower oil - mix everything thoroughly.
Then gradually add flour...

Knead the dough until the dough stops sticking to your hands.
You can let our dough rest for 10 minutes, but if you don’t have time, you can immediately start making pies.

Roll the sausage into pieces, then form them into balls...

Roll out the balls with a rolling pin,

So that we get circles 0.5 cm thick

put our filling on them, in my case it’s cabbage + carrots + onions)))

we pinch the edges, even a 3 year old child can do this, for example my daughter)))

it turns out like this...

Then we turn them over onto the table with the tucks so that we get a flat surface at the top.
