A not very popular fish among our housewives is catfish or sea wolf. And all because catfish meat is very loose and during normal frying of fish it simply spreads over the frying pan and turns into either jelly or fish porridge. Fish requires special preliminary preparation.

I want to offer you one of the recipes that never fails. Moreover, the fish was purchased at a promotional price and was beautiful.

I set three steaks to defrost at room temperature. There was a lot of water.

I then cut the steaks into small pieces, removing the skin and bones.

I soaked the edge of a white loaf in milk.

Then starch and flour. The starch will absorb excess liquid.

Having mixed everything, I got this minced meat.

Cook it over an open fire (and well-heated oil so that the crust sets immediately, otherwise the minced meat may spread).

  1. Finely chop 1 kg of catfish fillet with a sharp knife (you don’t have to worry about small bones). They also chop a couple of medium onions and a large clove of garlic.
  2. To the standard set of products add 70 ml of milk and add 4-5 tbsp. spoons of starch. Salt and pepper the minced meat.
  3. Fry fish cutlets from catfish fillets, spooning them onto heated oil. Brown on each side, and at the end sometimes cover the frying pan with a lid so that the cutlets steam.

If the mass is not dense enough, beat in an egg (sometimes it is recommended to use only the yolk; the white makes the dish tougher). But eggs can’t be found in all recipes.

Catfish fish cutlets: options

The easiest way to please your home with sea wolf cutlets is to fry the fillet in breadcrumbs. But for connoisseurs of traditional forms of serving the dish, the recipe for “standard” cutlets will be suitable.

  1. Take 700 g of fish and pass it through a meat grinder. The same is done with onions (2 pieces) and garlic (2-3 cloves).
  2. Minced catfish cutlets will turn out fluffy if you add 2-3 white bread or loaf crackers soaked in milk to the minced meat (also crushed).
  3. Semolina (4 tbsp) will add uniformity. After mixing it into the mass, you need to let the cutlets stand for a while (15-30 minutes).

Since fish mass differs from meat mass in a more liquid texture, it is recommended to immediately roll it in breadcrumbs (form balls with a spoon and dip them in breadcrumbs).

Sometimes the dish is completely cooked in a frying pan, or you can fry them until light brown, and then put them in the oven to bake - the catfish cutlets in the oven turn out no less juicy and aromatic. They are served with low-fat sour cream, or sprinkled with grated cheese. Fresh vegetables and herbs will only emphasize the pleasant taste of this fish and help make the dish less high in calories (cabbage, carrots, beets, cucumbers, tomatoes).

Let's start cooking. Cut medium-sized catfish fillets into portions. Marinate the fillet in the juice of half a lemon, add salt, spices and pepper. Leave to marinate for fifteen minutes. To bake catfish in the oven, take two and a half kilograms of catfish, two hundred to three hundred grams of hard cheese, three onions, half a kilogram of mayonnaise.

Now let's start cooking the catfish in the oven. Defrost the fish, wash it and dry it with a paper towel, then cut the fish into fairly large pieces. Grate hard cheese, mix grated cheese with mayonnaise and pre-chopped onions. Place the pieces of fish into the prepared mixture, mix again and leave the fish there to marinate for approximately twenty minutes.

After this time, put the marinated fish in a baking dish in the oven, put the dish in a heated oven and bake until cooked at a temperature of one hundred and ninety degrees.

Catfish in batter.

To prepare catfish in batter, we will prepare the following products as a side dish for the fish: three large spoons of vinegar (apple vinegar), a large spoon of vegetable oil, a large spoon of honey, a quarter of a large spoon of salt, three hundred grams of carrots (you must first grate them into strips), one pod of green sweet pepper, and for the battered fish itself we take four slices of bacon, a third of a glass of cornmeal, a large spoon of wheat flour, half a small spoon of salt, an eighth of a small spoon of ground red pepper, one large egg and about one hundred and eighty grams of catfish fillet.

Let's start preparing the side dish for the fish. Whisk vinegar with honey, salt and vegetable oil in a bowl. Add pepper and carrots and mix again. We prepared the salad for the fish.

Fry the bacon in a non-stick frying pan over medium heat until golden brown. Remove the bacon with a slotted spoon and leave it to drain off the fat. Mix wheat and corn flour, ground pepper and salt on parchment paper. In a bowl, beat the egg into which we begin to dip the pieces of fish, and then roll the fish in flour. Heat the bacon fat in a frying pan and fry the pieces of fish in it until golden brown. After that, take out the fish and place it on a plate. Cut the fried bacon into pieces and sprinkle on the fish. Serve the resulting fish with carrot salad.

Catfish Pie Recipe.

To prepare a catfish pie, prepare half a kilogram of ready-made non-yeast dough, half a kilogram of catfish fillet, one onion, two or three potatoes, two or three large spoons of vegetable oil, pepper and salt to your taste.

Let's start preparing the pie. Divide the finished dough into two parts. Grease the mold with oil, place one piece of dough on the mold, put chopped raw potatoes on top in a thin layer, sprinkle with pepper and salt, then put salted and peppered pieces of catfish, and chopped raw onions on top of it all. Pour oil over it all and cover with the second part of the dough, rolled into a flat cake. Pinch the edges well and leave the pie for about twenty minutes in a warm place. After this time, pierce the top of the pie with a fork in several places and place it in the oven for baking at a temperature of two hundred to two hundred and twenty degrees.

Catfish fish soup.

To prepare fish soup from catfish, we take half a kilogram of catfish (or mackerel, cod), half a kilogram of potatoes, fifty grams of butter, fifty grams of cheese, carrots, one parsley root, four onions, dill, garlic.

Let's start preparing the catfish soup. Roll part of the prepared fish in flour and fry in a heated frying pan with oil, put the other part of the fish in a broth in which diced potatoes and grated parsley root and carrots have long been boiled. As soon as the soup boils, add onions fried in a frying pan and fried fish. Bring to a boil again and we can remove the soup from the stove. Just before serving, sprinkle with chopped herbs; you can add a little crushed garlic and grated cheese for taste. The plates need to be warmed before pouring the soup into them.

Catfish fish cutlets.

To make fish cutlets from catfish, prepare half a kilogram of catfish fillet (it is best to defrost the fish the day before cooking), half a glass of chopped chives, one clove of garlic, three small spoons of potato starch, sixty milliliters of milk (it should be at room temperature), pepper, salt, a little olive oil.

Let's start with the method of preparing fish cutlets. Chop the fish fillets very finely with a knife (about five millimeters), put them in a bowl, chop the chives and also add them to the bowl, peel and squeeze the garlic onto the fish and onions, sprinkle starch on top and stir with a spoon, carefully pour milk into the mixture and mix. Drop a little oil into a silicone mold, spread it and place small formed cutlets in it. Place the pan in the oven and bake at a temperature of two hundred and twenty degrees. for eight to ten minutes.
