For the overall health of the human body, the health of the gastrointestinal tract is of great importance. Optimal health lies in the fact that the human body digests food well and removes toxins. As you know, digestion begins in the oral cavity, then food moves through the pharynx and esophagus to the stomach, duodenum, small and large intestines.
When eating, a powerful mechanism of digestion is activated. It is very important to chew food thoroughly - 20-30 times, since food must enter the stomach in the form of gruel. Food that enters the stomach in pieces is digested ten times worse.
Normally, from 0.5 to 2 liters of saliva is produced per day, secreted by three pairs of large and many small salivary glands; its pH is about 7.
When chewing, food is saturated with saliva, and with proper chewing, a liquid homogeneous mass is formed, due to which there are minimal costs for further digestion. Saliva enzymes break down mainly starches. Saliva has a chemical and bactericidal effect on food. Then the food from the mouth through the pharynx enters the esophagus, where active salivary digestion continues.
The esophagus is a four-layer muscular tube 22–30 cm long. Due to the wave-like contractions of its walls, liquid food moves through it and enters the stomach.
Digestion of food when it enters the stomach is determined by its quantity and composition. Depending on the concentration and combination with other products, alcohol, excess water, glucose, salt can be absorbed immediately.
In the stomach, the bulk of what is eaten is exposed to the action of gastric juice, which contains a number of enzymes secreted by special cells, and hydrochloric acid. 2-3 liters of juice stand out. For each digestion, the composition of the juice is different.
Pepsin is the main enzyme in the stomach that breaks down proteins.
Food moves to the exit from the stomach as the protein part is digested. In this regard, food enters the duodenum already in the form of an almost homogeneous semi-digested slurry. In the submucosal layer of the duodenum there are glands, the secret of which contributes to the further breakdown of carbohydrates and proteins; its inner surface is covered with many villi.
The duodenum is important because the main pancreatic duct and the common bile duct open into its cavity, through which bile produced by the liver enters.
Since bile completely stops the action of gastric juice, gastric digestion becomes intestinal (pH of bile - 7.4). During the day, the liver produces up to 1 liter of bile. It emulsifies fats - it forms an emulsion with them.
The pancreas performs two functions - endocrine (the hormones insulin, glucagon, etc. are produced), and exocrine, as a result of which 500–700 ml of pancreatic juice is produced per day into the duodenum.
Pancreatic juice is needed for the digestion of fats, proteins, carbohydrates; its pH ranges from 7.6 to 8.2 (alkaline). It contains a number of enzymes (amylase, lipase, etc.).
The duodenum passes into the small intestine 5–6 m long, which has transverse villi and folds, due to which its absorption capacity is greatly increased. With the help of coordinated movements of the folds and villi, food masses move and nutrients are absorbed through them. Only inside the walls of the intestinal cells does the final breakdown of food and the process of absorption take place. This is called parietal or membrane digestion.
In other words, the nutritional components already highly crushed in the intestine under the action of pancreatic juice and bile penetrate between the villi of the intestinal cells. The villi form a very dense border, so that the surface of the intestine is inaccessible to large molecules and especially bacteria.
Over 5 m of the small intestine, food is completely digested, and fragments of nutrients are divided into elementary components - fatty acids, amino acids, monosaccharides, which are absorbed and enter the bloodstream, but not into the general bloodstream. All blood from the stomach and intestines (thin and large) is collected in the portal vein and then passed to the liver. If the components entered the general circulation, then after the first meal a person could die. When food is broken down, in addition to useful compounds for the body, toxins are formed that are secreted by the intestinal microflora, various toxic and medicinal substances present in food.
Further, through the mucous valve, which prevents backflow, the remains of food slurry enter from the small intestine into the large intestine 1.5–2 m long, in which the absorption of water is completed and feces are formed, for which special mucus is secreted by the intestinal cells. 1/3 of the excreted feces consists of bacteria. There is a beneficial symbiosis between the human body and bacteria. At the same time, the microflora supplies vitamins, amino acids, some enzymes and other nutrients, and feeds on waste.
