The Latin name of the species (podagraria) speaks for itself - people have discovered since time immemorial that the plant helps treat gout and rheumatism.

Rhizome - long, horizontal, underground, creeping. It contains many seeds and buds, which allows the grass to actively grow, creating large thickets connected by a common rhizome.

The stem of the plant is erect, tubular, glabrous or with short thin hairs, furrowed, branching upwards. An adult plant reaches a height of 0.5 - 1 m.

Basal leaves are simple, twice trifoliate, pointed, oblong-ovate, sharp-toothed edges, glabrous on the front side, pubescent on the back. The leaf length can reach 10-30 cm, width - 15-35 cm. They grow on long petioles 30-40 cm long.

The upper leaves are smaller, less dissected, trifoliate, almost naked (without pubescence), grow on short petioles extended into the vagina.

The inflorescence is a complex umbel with 20-30 umbel rays, not exceeding 1.5 cm in diameter. It is especially useful in salads, in which sour, nettle, willow-herb, dandelion leaves are added for taste, and in spring - linden, willow. Goes to such salads and greens of onions, parsley, dill. Optionally, you can put sausage, egg, cheese, horseradish, and then the salad acquires a special taste. Salads will become more nutritious if you flavor them with a small amount of apple cider vinegar, kvass, birch sap or sour berry juice. Take 20-25 drops 20 minutes before meals. For external diseases, dilute vodka tincture with water (1: 1) and use for lotions, rubdowns, and washings.

It is better to use very young leaves and shoots for food, while they are still yellowish-green and, as it were, “transparent”. Under different conditions, they at this stage can be of different lengths. Goutweed, growing in shady places, longer produces greens suitable for food, its leaves are larger and more tender. And for winter harvesting, the plant is harvested in October-November, when it has a particularly high amount of vitamin C. For medicinal purposes, the leaves and petioles of goutweed are harvested during flowering (in June-July), and the rhizomes are harvested in late autumn.

Pickled gout: for 1 liter of marinade - 1 tbsp. salt, 1 teaspoon sugar, 2 cloves (spice), 12 allspice peas, 2 bay leaves, 1/2 liter of 6% vinegar, 1/2 liter of coda, or 1 liter of water, 2 tbsp. spoons of 80% vinegar essence.
