Greetings, friends! Today I want to talk about a recipe for a very simple meat dish that everyone, without exception, loves, both adults and children. These are minced hedgehogs with rice in a slow cooker.

Hedgehogs can be prepared in different ways, but the main ingredients of this dish do not change - minced meat and rice. They can be boiled, they can be stewed or baked in the oven, you can make gravy with vegetables for hedgehogs, you can stew them in sour cream. In general, the options are limited only by your imagination. But lately I’ve been cooking everything in a slow cooker, solely due to lack of time. It's very simple and convenient. Including minced hedgehogs with rice.

So, minced hedgehogs with rice in a slow cooker, recipe:

Ingredients

  • minced meat, preferably beef - 1 kg
  • rice - 1 cup
  • egg 1 pc.
  • garlic 2-3 cloves
  • salt, black and ground pepper, bay leaf, spices
  • tomato paste (optional) 2-3 tablespoons
  • onion 1 pc.
  • carrots 1 pc.
  • sour cream

Cooking method

It's very easy to cook hedgehogs in a slow cooker. Take minced meat, add washed raw rice, beat in an egg, salt, pepper, add spices to taste, squeeze the garlic through a press and mix everything thoroughly. The base for the hedgehogs is ready.

I know that they usually put rice in hedgehogs, pre-boiled until half cooked, but I don’t see the point in that. Hedgehogs take longer to cook than it takes for the rice to cook, so you can also add raw rice, it will cook perfectly inside the hedgehogs. And the beauty of this preparation is that the rice, swelling inside the minced meat balls, will come out, imitating needles and the hedgehogs will become real hedgehogs, i.e. very prickly in appearance. Pre-cooked rice will never give such an effect; the hedgehogs will be round, like koloboks.

Pour a little vegetable oil into the multicooker, add finely chopped onions and grated carrots, turn on the “Fry” mode and fry the vegetables for 5 minutes.

Next, from the pre-prepared meat base, we make round balls with a diameter of 6-7 cm, approximately like snowballs, place them in a slow cooker, distributing them evenly, pour boiling water from the kettle over them so that the water covers the topmost hedgehogs, salt, add black peppercorns and bay leaves. sheet.

Fans can add 2-3 tablespoons of tomato paste, but if hedgehogs are intended to be used in baby food, I do not recommend doing this, since tomato paste may be poorly absorbed in the stomach of babies due to its high acid content.

Next, turn on the “Stew” mode, set the cooking time to 1 hour and relax. A side dish for hedgehogs is not required, since the dish contains both meat and rice instead of a separate side dish. Serve hedgehogs with sour cream and fresh herbs. You can prepare a salad of fresh vegetables to go with hedgehogs. Bon appetit!

For all lovers of rice-meat hedgehogs, I offer a simple recipe for hedgehogs in a slow cooker. I know of at least three ways to prepare them: frying, baking and stewing. And since my child cannot stand fried rice, I have to cook them without a crispy crust, namely, stew them. Previously, I used a thick-walled saucepan for this - the need to scrape off the stuck remains of hedgehogs did not inspire much culinary feats. With the advent of a miracle helper in our home - the Redmond-4502 multicooker - the process has not only become significantly simplified, but also reduced in time. The hedgehogs turn out very juicy and keep their shape perfectly, so I recommend this recipe to all lovers of this simple food.

Required:

  • 500 g minced pork (you can mix pork and chicken in a 50 to 50 ratio);
  • ⅔ cup round rice, well washed under running water;
  • 1 ⅓ glasses of water;
  • 1 onion;
  • 3 tbsp. spoons of coarsely grated fresh cabbage (hedgehogs and cutlets with a small addition of cabbage turn out especially juicy);
  • 1 large egg;
  • salt (I put 1 ⅓ teaspoons);
  • ground black pepper;
  • 1 tbsp. spoon of kutchup;
  • 2 tbsp. spoons of fresh sour cream;
  • parsley and dill.

A simple recipe for hedgehogs in a slow cooker

If you are using ready-made minced meat, defrost it in advance (about 5-6 hours in advance). Or defrost the meat if you plan to grind it just before cooking the hedgehogs. Also boil the rice in advance - if you follow the indicated proportions, it will turn out to be slightly hard. Add minced meat, rice, finely chopped onion and grated cabbage. Beat in the egg, salt and pepper. Stir the minced meat vigorously until smooth – there should be no lumps of rice in the mixture.

Mix sour cream and ketchup in a deep bowl. Wash the greens and chop finely. Pour some vegetable oil into the bottom of the bowl. With wet hands, form small round hedgehogs and place the first batch into the bowl.

Brush each with sour cream sauce and sprinkle with herbs.

Form hedgehogs from the remaining minced meat and place them in a second layer in the bowl. Also brush with sauce and sprinkle with chopped herbs. Rinse the sauce container and pour the liquid into the bottom of the bowl. Add a little more water - it should reach the middle of the hedgehogs of the first layer.

Place the bowl into the slow cooker. Close the lid and use the “menu” button to select the “quenching” mode. Set the cooking time to 1 hour 15 minutes and press the “start” button.

After the specified time has passed, carefully remove the hedgehogs from the bowl and place on plates.

Garnish the dish with a fresh salad - cabbage, carrots and apples, or pickled vegetables - cucumbers and tomatoes. You can serve hedgehogs with any homemade sauce - spicy ketchup or spicy adjika. Bon appetit!

Ingredients:

It is better to take round rice, as it becomes sticky as it cooks and turns into porridge, unlike long rice - which means it can perfectly fix the minced meat and make it even tastier.

Step 1

Fill the rice with water, rinse it and fill it again.

Step 2

Soak the bread in water or low-fat milk.

Step 3

Wash the meat, cut into medium pieces and pass through a meat grinder.

Step 4

Add pre-chopped onion and squeezed bread to the meat, squeeze out the garlic and salt the minced meat. Then pour the rice into the mixture and mix the mixture again. After this, it is recommended to beat it off - this is not difficult to do, you just need to take the mixture in your hands and “throw” it into a bowl.

Step 5

We make balls from the minced meat and roll them in flour. After this, put the products in the multicooker bowl, where you first need to pour a little oil. Fry the products on the “Baking” program for 20 minutes, during which they need to be turned over 2 times.

Step 6

Now we make the gravy - mix 2 tablespoons of sour cream and tomato paste, add a pinch of flour, 250 ml of water and stir the mixture. Bring the mixture to a boil, then pour it into the slow cooker and simmer the balls for 20 minutes on the “Stew” mode.

That's all - as you can see, the preparation of this dish is simple and very interesting.
