All kinds of rolls based on puff pastry have long been popular among chefs because they are easy to prepare, do not require special skills and are very tasty. You can put any filling: meat, fish, vegetable, fruit, or combine several products at the same time. It is better to prepare the base for the dish yourself (with or without yeast), but if you don’t have time to knead it, then a store-bought one will do.

How to make puff pastry rolls

A ready-made base bought in a store will save time preparing the roll, but the homemade product and baked goods based on it will turn out much tastier. Puff pastry can be kneaded with or without the addition of yeast. In the first case, the dish will be more airy, in the second - less fluffy, but at the same time crispy and crumbly. Determine which option to choose based on the composition of the filling. For savory products, use a yeast-free base, and bake sweet ones with yeast.

Puff pastry without yeast

To prepare the yeast-free base, pour ½ tbsp into a bowl. warm water, dissolve 1 tsp in it. salt and 0.5 tsp. Sahara. Add 2 tbsp. flour, knead the dough, divide the mass in half. Separately, melt ½ stick of butter. Roll out both parts of the base separately as thin as possible and grease with butter. Then wrap the first one tightly around the rolling pin and make a longitudinal cut. You will get a multi-layered layer. Do the same with the second part of the base, lay the layers on top of each other. Wrap in cling film and refrigerate for at least an hour.

Puff-yeast dough

To knead puff pastry, take 85 ml of warm water, dilute 7 g of dry yeast and 1 tsp in it. Sahara. Leave the dough for 20 minutes in a warm place, and then mix with 1 tsp. salt and 2 tsp. Sahara. Sift 750 g of flour onto a work surface, grate 200 g of chilled butter, chop with a knife until fine crumbs are obtained. Add 130 ml of warm milk to the dough, beat in the egg, stir. Pour the mixture into the well made in the flour, knead the mass so that it does not stick to your hands, place it in cellophane, put the base in the refrigerator for 2 hours.

Puff pastry roll recipe

The process of preparing a roll consists of 4 stages: kneading (buying) the dough, preparing the filling, forming the dish and baking it. The great advantage of this dish is the ability to bake both a sweet dessert and a snack at the same time from one portion of the base, using different types of fillings. Appetizing rolls prepared according to the recipes listed below can be served not only for a family lunch, dinner, but also for a holiday table and taken for a snack on nature, work, etc.

This roll turns out very juicy thanks to pickled cucumbers and fresh tomatoes. Mustard gives the dish a slight spiciness and piquancy; if desired, you can add ketchup to it, but then it is better to exclude tomatoes. It is better to use two types of cheese: cut the harder one into cubes, and grate the softer one. This way the filling will acquire special aroma and taste notes.

Ingredients:

  • dough (yeast-free, puff pastry) – 0.3 kg;
  • ham, cheese (hard varieties) – 0.1 kg each;
  • cucumbers (pickled) – 4 pcs.;
  • tomato (fresh) – 2 pcs.;

  • oregano, marjoram, basil;
  • mustard, sesame seeds - 1 tbsp. l.

Cooking method:

  1. Cut a piece of parchment to the size of the baking sheet and roll out a puff base on it.
  2. Grease it with mustard, evenly distribute half of the cheese, cut into small pieces.
  3. Place chopped ham and tomato pulp on top, after removing the seeds and juice.
  4. The next layer is pickled cucumbers, cut into small cubes, sprinkle them with the remaining grated cheese.
  5. Wrap the roll, pinch the edges, coat the top with beaten egg.
  6. Sprinkle with sesame seeds, seasonings, make punctures, bake the dish for half an hour at 180ºC.

Before you start baking puff pastry rolls, check out these tips from experienced chefs:

  1. Do not defrost the base completely before starting work, warm it up a little in the microwave so that the mass can be rolled out.
  2. If you choose a berry filling for a puff pastry roll, it is better to use fresh berries rather than frozen. The latter will produce a lot of juice, which will flow out during baking and the dish will become watery.
  3. If you use peaches, nectarines, or apricots for delicacy, do not peel them. Just finely chop the fruit.
  4. Mix the sour filling with sugar before forming the roll; if you add sweet fruits and berries, sprinkle granulated sugar on top of the already rolled product.
  5. It is necessary to place the rolls in an already well-heated oven.

Therefore, if there is no difference, there is no point in using a yeast base.

How to Improve the Taste of Sausage and Cheese Rolls

If you want variety, you can use your favorite additives. The pies will become even more interesting.

Good hearty option with rice

Rice boiled until tender is mixed with chopped sausage, sautéed onions, hard cheese and spices.

Nice option with vegetables

You can take the following products according to your preferences and the filling of the refrigerator:

  • bell pepper;
  • tomatoes;
  • broccoli;
  • white cabbage (fried);
  • pea puree (with a minimum of water);
  • salted cucumbers;
  • corn;
  • olives\olives.

All these additions will improve the taste of puff sausage rolls and provide maximum pleasure to the tasters.

It tastes great with mushrooms

Minced mushrooms (fried with onions) or finely chopped mushrooms (also fried with onions in sour cream) are mixed with sausage, cheese, herbs, and spices.

There is an opinion that the sausage component is superfluous here. But when preparing pizza, for example, we don’t think so. And there is no need to doubt here. You can't ruin puff rolls with sausage. You can take this food with you to work for lunch tea or on a picnic. Having such a treat, you don’t have to worry about how soon the kebabs will fry.

Decorating puff pastry rolls with sausage

Greens and sprinkles will make the appearance appetizing, attractive and inimitably attractive.

Here's what we use as toppings:

  • white or black sesame;
  • flax seeds;
  • caraway;
  • sunflower/pumpkin seeds;
  • coarse salt.

Observations from practice:

  1. You can brush the top of the dough and sausage rolls with beaten egg, yolk or water with paprika or turmeric.
  2. Be sure to add fresh or frozen dill (parsley, basil) to the filling. It will be incredibly fragrant and beautiful. If desired, we sprinkle it on the finished puff rolls when they are already on the table.
  3. You should not sprinkle chopped greenberries on top of the baked goods while they are still in the oven. It will definitely burn and ruin the surroundings.
  4. Whole sprigs of greens on top or lettuce leaves on the bottom can also decorate dough rolls with sausage and cheese. And it’s more pleasant to eat flour food with meat filling in the company of lettuce leaves or dill-parsley sprigs.

A puff pastry roll is a real lifesaver for many modern housewives. Especially if guests are already on the doorstep, and there is nothing to pamper them with. The filling for the roll can be either sweet (for tea, for example), or meat or vegetable (as an independent dish). Moreover, even inexperienced housewives can prepare both options.

Store-bought dough or homemade?

One of the most burning questions for housewives is what kind of dough to use. It would seem that a puff pastry roll should be exclusively homemade from start to finish. However, not everyone has time for such a lengthy process. And industrial puff pastry is no worse! It doesn't even need to be completely defrosted before use. 5 minutes of heating in the microwave is enough. Therefore, it makes no difference which product will be used. Puff pastry rolls, the recipes for which will be described below, turn out tasty, juicy, and airy.

Yeast or non-yeast dough

The fundamental difference between these two types of dough is how they rise. That is, a meatloaf made from puff pastry with yeast will spread a little on the baking sheet, become taller and acquire a large number of layers. And this is not very good for such a filling. But a puff pastry roll (sweet or with berries) without yeast will turn out too flat and inconspicuous. Therefore, you need to choose based on what filling will be used.

Meat option

Most of all, this dish is liked by men, who usually don’t particularly like baking. Meatloaf made from puff pastry (store-bought) is prepared very quickly if all the ingredients are prepared in advance. We will need:

  • minced meat (it’s good if it’s made from pork and beef with the addition of onions and a loaf soaked in milk so that the consistency is stiff);
  • bulb onions;
  • spices;
  • White cabbage;
  • hard cheese;
  • yeast-free puff pastry.

Step 1: filling

It’s easy to prepare: the minced meat is fried in a frying pan with a small amount of vegetable oil. Finely chopped onions and cabbage twisted through a meat grinder are gradually added to it. Spices are always used solely to taste. The cheese is grated on a fine grater and gradually introduced into the hot minced meat. You can add a couple of cloves of garlic for flavor. At this time, it is better to take the dough out of the freezer so that it thaws. Or you can defrost it in the microwave according to the instructions.

Step 2: Dough

Of course, a store-bought product is much more convenient to use than to knead it yourself. Puff pastry rolls, the recipes of which can be very different, are prepared on average in 20-40 minutes at a temperature of 170-200 degrees. And to make them especially tasty, there is a little trick. So, the finished dough, which is most often sold in the form of frozen sheets, needs to be rolled out with a rolling pin into a small thin pancake, connecting the sheets together. This will make it easier to roll the roll later. If you don’t have a rolling pin at hand, a simple glass bottle can replace it. There is no need to sprinkle flour on the dough; it will not stick.

Step 3: Rolling the Roll

This is the most difficult moment in cooking, since the twist determines how the dish will turn out in the end and how neat it will be. A puff pastry roll is rolled as follows: first, the filling is laid out over the entire surface, retreating 5 mm from each edge except one. This is necessary so that you can pinch it well. The dough with filling is rolled into a tight stick, and punctures are made throughout the roll using a fork.

Step 4: Bake

This is the simplest of all cooking. Preheat the oven to 200 degrees, line a baking sheet with parchment paper, which will prevent the bottom of the culinary product from burning. The puff pastry meatloaf is laid out so that the edges do not touch the walls of the dish on which it lies. If you use a simple flat baking sheet, then the product can be placed however you like. One of the most popular and simple recipes is the version stuffed with apples, cinnamon and sugar. It is not difficult to prepare it, even if you have no experience. We will need:

  • apples;
  • yeast puff pastry;
  • cinnamon (1 heaped teaspoon);
  • sugar (3 heaped tablespoons).

If you like your baked goods sweeter, you can increase the amount of granulated sugar. Rolls made from puff pastry dough differ from culinary products based on non-yeast dough in that the former significantly increase in volume during baking. The result is airy and fluffy puff pastries, which consist of many thin layers. The filling for apple roll is prepared simply: wash the apples, peel them, remove seeds and cores, and chop them finely. Sugar is mixed with cinnamon. This sweet mixture is poured onto apples. The filling is ready. The dough is defrosted and rolled out to a thin rectangle. The apple filling is spread over the entire area so that about 10 cm of free space remains on one edge, otherwise it will not be very convenient to twist the roll. The rolled dough is placed in the oven for 20 minutes, provided that the temperature is about 200-220 degrees.

Curd puff roll

Children especially like this option because it is tasty, sweet, and nutritious. A puff pastry roll filled with cottage cheese sometimes turns out a little moist inside. This does not affect the taste at all. For preparation you will need the following products:

  • raw chicken egg;
  • granulated sugar;
  • cottage cheese;
  • raisins or dried apricots (pre-soaked);
  • puff pastry dough;
  • powdered sugar.

Beat the egg with a mixer until foamy, then gradually add sugar and beat again. Cottage cheese is gradually added to the sweet mass. At the same time, do not turn off the mixer, constantly whisking the filling with it. The result should be a curd mass, the consistency of thick sour cream. The dough is rolled out to a flat pancake 2-3 mm thick. It is filled with cottage cheese filling, then finely chopped raisins or dried apricots. The roll is carefully twisted so that the filling does not come out at the edges. The outside of the dough is coated with egg yolk or butter to make the baked goods golden brown. The roll is baked in the oven for 20-30 minutes at a temperature of 180-200 degrees. The finished culinary product is sprinkled with powdered sugar. There is no need to pierce the dough with a fork before putting it in the oven.

It is noteworthy that it is not recommended to cook puff pastry rolls with frozen berries. First, they spread while baking, so the inside of the baked goods is very moist. Secondly, when cooking, they produce too much juice, which simply flows out. As a result, the layers fall off and the baked goods turn out watery and bland.

Fresh berries are well suited for puff pastry. They do not defrost during cooking and do not spread. Strawberries, for example, can be finely chopped and sprinkled with sugar just before rolling. But it’s better to take cherries immediately without seeds, allowing the juice to drain a little. It is better not to peel apricots, peaches, and nectarines, but it is advisable to finely chop them before placing them on the dough. You can sprinkle sugar on the already rolled roll, and not on the filling itself. This way the baked goods will turn out especially sweet and rosy. There is no need to additionally lubricate it.
