Usually I prepare this appetizer not for the festive table, but after the holidays, when two or three types of cheese are found in the refrigerator, boiled eggs that are not useful for salads, and the remains of homemade mayonnaise. I always use homemade mayonnaise, you can use the one you are used to dressing salads with. Or instead of mayonnaise, add thick sour cream (as an option - mix sour cream and mayonnaise).

Ingredients:

- hard cheese - 100-120 gr;
- processed cheese - 1 piece (100 gr);
- sausage cheese - 100 gr;
- boiled eggs - 2 pcs;
- mustard grains (ready) - 2 teaspoons;
- mayonnaise - 2 tbsp. spoons;
- thick sour cream - 1-2 tbsp. spoons;
- salt - to taste;
- ground black pepper - 0.5 tsp;
- crackers, cookies, dried bread, vegetables, herbs - for serving.

How to cook with a photo step by step




So that the processed cheese is easily rubbed and does not remain on the grater, put it in the freezer for 15-20 minutes. Then grate along with hard cheese. Transfer to the bowl of a blender (chopper).




Grate boiled eggs on a coarse grater (without separating the yolk and protein). If yolk is required for garnish, set one aside and cover to keep from drying out.




To prepare sandwich paste, smoked cheese (sausage) does not need to be frozen, but it is more convenient to rub it chilled, fresh from the refrigerator. You can grate it on a coarse or fine grater along with a brown shell. If you have a food processor or a powerful blender, then you can simply break the cheeses into pieces or cut into plates. A grater is needed so that the spread is more homogeneous and the technique does not work to the limit.






Transfer all cheeses and grated eggs to a blender bowl with a knife (chopper). Add a spoonful of sour cream and a spoonful of mayonnaise. Grind at high speed into a smooth paste.




Add mustard seeds. If the paste turned out to be very thick, put another spoonful of mayonnaise (or sour cream).




Salt and pepper the sandwich paste. Whip it all up again. If necessary, adjust the density by adding sour cream (mayonnaise). By consistency, the spread will turn out to be quite thick, but plastic and will be easily spread on slices of bread.






Put the finished egg and cheese pasta for sandwiches in the refrigerator for half an hour and after that you can cook various snacks with it. If the spread is not spicy enough for your taste, you can flavor it with garlic, pepper or add mustard.
