Fish milk, its beneficial properties, interesting recipes. Salmon milk benefits and harms Is it possible to eat milk

The history of eating milk goes back more than 800 years. In European countries, the consumption of milk from various salmon fish is not as extensive as in Russia and Asian countries.

Animals also love to eat this product, for example, bears. They eat them, like caviar, first of freshly caught fish. These parts are the most nutritious and contain the greatest amount of nutrients.

What is milt in fish?

Milt is the seminal gland of male fish, which contains sperm. The name comes from the shade that the ripe testes have. Milk belongs only to fish, so the expression “fish milk” is incorrect.

To buy unspoiled milk, you need to pay attention to some criteria:

  • you should buy fish seeds only in certified stores and markets that have been certified for product quality;
  • You should ask the seller where the fish was caught;
  • fresh milk has a pinkish-white tint if it was in sturgeon; the pure milky white color indicates that they belonged to an adult fish;
  • Externally, fish gland is distinguished by a smooth, dense substance with no mechanical damage.

The seminal gland is found as an independent product in canned form. But sometimes an unscrupulous manufacturer replaces the liver of the cod fish family with milt.

Dietary supplements and immunomodulators contain extracts obtained from fish testes. Most often they are found in antidepressants and anti-stress drugs, they help improve memory and concentration. In cosmetology, milk extracts are added to anti-aging products; fatty acids and microelements have a beneficial effect on the condition of the skin and improve its elasticity. The composition also has a whitening effect. Milk-based shampoos and masks accelerate hair growth and smooth out the cuticle layer.

Benefits and harms

The milk of salmon and sturgeon fish contains a large amount of protein. In turn, it reduces the risk of blood clots, strengthens the cardiovascular system, and reduces cholesterol and hemoglobin levels in the blood. Sodium salt, obtained from the testes of sturgeon fish, is useful for its anti-inflammatory effect - it strengthens the body's immune functions, increases the rate of healing of wounds and ulcers.

Vitamins of various groups, Omega-3 fatty acids and protamine have an effective effect on the nervous system and reduce the risk of developing cancer. Polyamine stimulates collagen production and improves cell metabolism.

Derinat obtained from the testes is part of various immunomodulators, increases the resistance of immunity to fungal, microbial and viral diseases, and stimulates hematopoiesis. Derinat is also used for diseases of the mucous membranes of the throat, acute respiratory viral infections, sinusitis, and rhinitis.

Disadvantages include individual intolerance to substances contained in milk, which can cause allergies. For this reason, children under 3 years of age are prohibited from eating milk, as are pregnant and nursing mothers.

The milt of fish caught in polluted waters can cause negative effects on humans due to the accumulated toxic substances in the body of the individual. Specially farmed fish cannot boast of high quality.

Milk is contraindicated for people suffering from excess weight and metabolic disorders.

A product prepared with a large amount of oil is not recommended for consumption if there are contraindications, since it contains a lot of fat, and additional oil can cause increased cholesterol levels in the blood, which will lead to the formation of cholesterol plaques and heart defects.

Composition and calorie content

Like fish oil, the seminal gland contains polyunsaturated fatty acids. Protamines improve the body's sensitivity to medications - this is especially useful for people suffering from diabetes. Glycine affects brain activity. B vitamins (especially B12, which is found in large quantities) replenish 90% of the daily requirement. Various minerals - iron, phosphorus, calcium, sodium, magnesium - are involved in the prevention of diseases of the thyroid gland, osteoporosis, and nervous system.

They go well with pies and are used to create salads and pate.

As a side dish, the testes are eaten with various cereals, fresh vegetables and as an independent dish.

To learn how to make delicious milk, watch the video below.

Will be described below) are the testes of male fish. It is worth especially noting that such a product is considered one of the most valuable and delicious. That is why there are quite a large number of ways to prepare salmon milt tasty and quickly. The benefits and harms of this ingredient have long been studied by experts. If you doubt that this part of the fish is really healthy, then we bring to your attention a complete list of exactly what elements and substances are contained in it.

Salmon milk: benefits and harms of the product

Salmon milk contains a huge amount of fats and proteins that are very valuable for the human body. This ingredient also includes vitamins such as A, E, PP and C, as well as group B. Among other things, salmon milk, the benefits of which are often disputed by nutritionists, contains many useful substances - microelements. Among them, iron, sodium, potassium, phosphorus and magnesium can be particularly highlighted.

Proteins and fats

Surprisingly, there is actually not much fat in such a product. However, when answering the question of whether milk is healthy, experts nod in the affirmative, not only because this ingredient contains a huge amount of vitamins and microelements, but also because it contains a great variety of polyunsaturated fatty acids, namely Omega-3 . Thanks to these properties, this product is an ideal preventative for a healthy cardiovascular system.

As for proteins, thanks to them there is a unique opportunity to prolong the action and contribute to the effectiveness of a number of drugs. For example, doctors quite often prescribe insulin in combination with protamines (low molecular weight proteins). This complex makes it possible to slow down the absorption of the drug from the injection site, which is quite good for those who have diabetes.

We cannot ignore the fact that salmon milk (the calorie content of this product will be presented below) is a source of vital amino acids. Among them, glycine should be highlighted, which is often used to stimulate the activity of brain cells, as well as to treat any neurological diseases.

Other product properties

Salmon milk, the benefits and harms of which we are considering today, also contains substances that are immunomodulators. Thus, when consuming this product, a person’s immunity increases and inflammatory processes in the body are suppressed. Moreover, such substances promote rapid healing of wounds (ulcers) and improve hematopoietic functions in the body. It is worth noting that salmon milk is also actively used in cosmetology, using it in various products to slow down skin aging.

Salmon milk: caloric content of the product

As for the harmfulness of this product, we cannot provide such a long list as in the case of beneficial substances. After all, salmon milk does not contain elements that negatively affect the human body. The only disadvantage of this ingredient is that it is a rather high-calorie product. Thus, 100 grams of fresh milk contains almost 100 energy units. Naturally, in the process of preparing any dishes, this figure increases significantly. That is why experts do not recommend consuming salmon milk in large quantities, and for those who are overweight, it is completely prohibited.

Thus, when purchasing fresh fish, or rather salmon, you should not throw away its entrails, classifying them as useless offal. After all, the benefits of this product are very high, and you will be able to appreciate it only after you personally try it.

  • salmon;
  • trout;
  • pink salmon;
  • red salmon;
  • chum salmon;
  • grayling.

Representatives of the family can live in rivers and seas.

Like other animals, fish have their own reproductive systems. The eggs of females will later produce offspring. Males, instead of a sac with eggs, have milk - seminal glands, with the liquid from which they fertilize the eggs.

In mature individuals, these insides have a milky color, which gives the glands their name.

Many people know the high usefulness of salmon fish. A high content of nutrients is found in both meat and milk. This is why they are valued.

They are useful and already injecting insulin, since the protein slows down the absorption of insulin at the injection site, prolonging its effect in the body.

The patient has to inject himself with insulin less often, which has a positive effect on the functioning of the internal organs.

In the entrails, as in all fish, contains a large amount of polyunsaturated fatty acids.

Additionally, milk is rich in Omega-3 fatty acids, which strengthen the walls of blood vessels and make them more elastic. They thin the blood, relieve hypertension, helping protect against blood clots, heart attacks and strokes. Strengthens the heart.

Fish offal is a source of glycine, which has a beneficial effect on brain function and mental activity.

Milk contains many vitamins that are quite valuable for the body - C, E, group B.

Everything is good in moderation. For example, exceeding the norm will negatively affect the functioning of the digestive system.

Since milk contains many vitamins, the first thing that concerns those who want to get maximum benefit is to preserve nutrients inside the product. The main rule, which many are familiar with from childhood, is not to use frying as a cooking method.

Frying over high heat will cause the vitamins and other nutrients to decompose, destroying much of the beneficial effects. Therefore, it is preferable to cook.

What milks should not be used and to whom they are contraindicated

For processing, milk from fish (pink salmon, chum salmon) caught in clean waters is used. Fish raised by farmers has no value for milk production. The quality of the water leaves much to be desired, and the fish become saturated with harmful substances.

People who are allergic to seafood or have an individual intolerance to the product cannot consume milk, as this can aggravate the symptoms. It is recommended to adjust any doubts and diet with your doctor.

In case of impaired metabolism, obesity, the product is prohibited for consumption. Milk cooked in large amounts of butter can make the situation worse by adding extra calories and carcinogens.

Milk has been consumed as food for about 1000 years. It is interesting that, having caught a fish, the bear first absorbs the caviar with milk - the most nutritious parts of the fish. The habits of predators led man to understand the value of the product. This hypothesis was confirmed by the medieval healer Amirdovlat Amasiatsi. He argued that some of the healing properties of drugs were discovered by animals. The ability of animals to be healed using herbs, roots and berries was noted... There is a high probability that the bear’s addiction is an indicator of the benefits and quality of the milk.

Scientists have proven the positive effect of high-quality nucleotides found in chum salmon milk on age-related skin changes.

Having studied all the characteristics of the product, the United States joined the connoisseurs of milk. They took the issue seriously and use them in cosmetology and healthy nutrition, and use them as a complete nutritional supplement. The effectiveness and popularity of milk is covered in all foreign media.

How to cook properly?

Since salmon milt has a valuable composition, it is important to use processing methods that do not lose its beneficial properties. When it comes to cooking, preference is given to cooking. If the fish product is fried over high heat, this will lead to the loss of vitamins and the breakdown of other nutrients. The benefits are reduced to a minimum.

In cooking, this is a universal ingredient from which you can prepare an appetizer, salad, or add it to a side dish instead of meat. Fish milk can be boiled, stewed, baked, salted, pickled; fried fish offal is a tasty, but not beneficial, and even harmful dish. This is a delicious filling for pies, a flavoring additive for fish soup and fish pate.

Traditional Asian cuisine includes a lot of raw fish products in its dishes. But by consuming salmon milt in this form, there is a danger of contracting helminthic infestation.

The benefits of salmon milk are obvious. Thanks to the interest of scientists in the properties and effects on the human body, new aspects of the product are constantly being discovered.

Fish milk - a forgotten delicacy

History and geography of the product

N.V. Gogol, who depicted the dinner of a middle-class gentleman in Dead Souls, also mentions sterlet fish soup with burbot and milk. This and other forgotten or now considered outlandish dishes with milk were widely known in the Russian Empire two centuries ago.

The testes of river and sea fish were used as food by many peoples, in whose cuisine seafood traditionally occupied one of the main places. Today, when the processing of fresh fish mostly takes place on sea vessels, milk is becoming less and less common on the gourmet table. If they are removed from the fish on the kitchen table, they can simply be thrown away along with the rest of the tripe.

But the testes, like caviar, are the most valuable product. It is not for nothing that in the Finnish language there is not even a division between these two concepts. Fish soups and pies with milk are found in the Karelian-Finnish culinary culture and among the Bulgarians, while the French and Mediterranean residents prefer to add protein-rich milk not only to soups, but also to main courses. Italians, for example, add milk to fish balls. And the Japanese still believe that cod milk marinated in a sour sauce, extracted from a still living fish, will impart its vitality and strength to a person. "Shirako" is a real pride of national restaurants, where the dish is served with herbs and caviar.

True, not all fish have testes that are so useful. There are records that during his voyage, James Cook, being in New Caledonia in 1774, decided to try the local dishes. After a dinner where the guest of honor was served exotic fish and local fruits, Cook lost the ability to think clearly, stopped walking and was on the verge of life and death for several days. It turns out that he ate the milk of one of the fish, which caused severe poisoning.

But it could have been worse. Today, a strict ban has been introduced on eating the milk of puffer fish, an attractive but dangerous delicacy. They can accumulate toxins and natural poisons from the insides of other fish that are quite exotic for the northern hemisphere.
Therefore, the milt of several fish species is prepared on an industrial scale, namely salmon, cod, large representatives of small fish and some other species. The testes of sturgeon fish are also tasty, but due to the rarity of the latter, it has been almost impossible to taste the milk of sterlet or sturgeon lately.

Types and varieties

When gutting on fishing vessels or in a fish processing plant, milt is removed from a fresh carcass, cleaned of blood clots, films and vessels, and then frozen or salted.

Regardless of the type of fish, the formed and ripened milk has the appearance of oblong plastic film sacs of milky white or pinkish color. It is allowed to harvest testes of fish suitable for processing, but the milk itself must not be damaged. The consistency of fresh whole milk is dense and elastic.

Frozen products, after carefully thawing at zero temperature, can be immediately subjected to culinary processing. If the milt is extracted from freshly caught fish, it is better to soak it in a weak solution of vinegar or lemon juice for several hours. Before further preparation, salted milk is soaked in clean water and then marinated for a short time.

Beneficial features

Fish milk is the richest source of protein, amino acids and vitamins. Moreover, the substances in their composition are so valuable that trawlers supply part of the frozen products for the needs of the pharmaceutical industry. Here, a number of medicines and dietary supplements containing protamines are produced from the seminal glands of fish.

The list of vitamins in milk starts with group B. This product also contains vitamins A, D, E and PP. The presence of phosphorus, iron, magnesium and sodium in milk suggests the benefits of this product for problems with the heart, nervous and vascular system. Scientists have discovered previously unknown active compounds in the testes of sturgeon and salmon fish. Once in the human body, they are able to act as natural catalysts for immune processes during viral and bacterial infections.

Milk contains practically no carbohydrates, but contains an excess of valuable fatty acids. Therefore, the introduction of dishes with milk into the daily diet of patients with atherosclerosis helps normalize cholesterol levels and can be considered an effective prevention of strokes and heart attacks.

Taste qualities

The taste and aroma of the milk corresponds to the type of fish from which it was extracted. The testes of salmon fish, such as chum salmon, salmon and sea trout, are most valued by culinary specialists. The milk of cod, burbot, toothfish and notothenia is good.

After thermal cooking, the homogeneous consistency of the product becomes denser, but at the same time smears a little. Salted milk absorbs salt quite quickly, which can affect its taste. Soaking will help avoid excess saltiness. Milk is successfully marinated by making a vinegar-oil filling and adding spices and herbs to the product.

With a pronounced fishy aroma and taste, milk goes well with many products, absorbs the odors of ingredients prepared with it and is used in various dishes.

Use in cooking

Underestimated or half-forgotten by culinary specialists, milks are perfectly fried and stewed, salted, pickled and baked. For example, in Japan, in addition to the already mentioned dish Shirako, with milk and steamed caviar they make the most delicate omelette chavan-mushi. Koreans fry fresh testes in boiling fat and serve with pickled vegetables and red peppers; in Italy, milk stewed in its own juice with spices is added to salads, risotto And pasta. This product makes a hearty and flavorful potato casserole or lasagna. And cutlets and meatballs made from low-fat varieties of fish with milk will become unusually tender and juicy.

The famous Russian collector of culinary traditions V.V. Pokhlebkin wrote that milt, often discarded by cooks, will not yield to any fish if it is simply rolled in white breadcrumbs or wheat flour and fried until golden brown. No gourmet will refuse such a tasty and, moreover, boneless treat. And Pokhlebkin advised making minced meat for kulebyak and porozhki from milk with semolina and fried onions. Milk is good both hot and as a cold snack. The pates with milk, mushrooms and butter are excellent. This product is made from forshmak, milk is also stewed in cream and tomato sauce.
