How to cook classic okroshka using whey and sour cream with sausage

Boil hard-boiled eggs and potatoes in their skins in advance. Peel the eggs and cut them. Place in a deep bowl in which you will store the okroshka.

Cut the boiled sausage into small cubes. “Doctorskaya”, “Molochnaya”, etc. are good for the recipe. Just if possible, do not use too cheap sausage, so as not to spoil the taste and quality of the dish as a whole.

Add diced boiled potatoes to the pan.

Slice fresh cucumbers and place with the rest of the ingredients.

Wash the green onions and dill. Shake off the water and chop the greens finely.

The cutting is ready. Now start refueling. In a separate bowl, mix mayonnaise, sour cream and mustard. Add the last ingredient to taste. One teaspoon of mustard will be enough for a slight spiciness.

Mix the dressing with the chopped meat, pepper and salt.

So far we have got something like an Olivier salad. But as soon as we pour the cold whey into this mass, we get the perfect cold soup. Let it sit for at least half an hour in the refrigerator so that all the ingredients give off their taste.

Serve the whey-based okroshka cold.

You can serve okroshka on the dinner table with fried pies, potatoes in any form, cutlets or meat. In general, this cold soup is considered an ordinary first course.

  • You can make your own whey from sour homemade milk. To do this, use an oven or water bath.
  • Recipe for the oven: pour 0.5-1 liters of milk into jars. Place in a cold oven on plates and a baking sheet. Do not cover with lids. Set the temperature to 100 degrees and wait for the whey to separate from the curd on its own. This will take about 30 minutes from the time the oven is fully heated.
  • Stovetop Whey Recipe: Pour water into a bowl. Place on the fire and bring to a boil. Place another bowl on top of this container so that the bottom touches the water. It should contain curdled milk. Heat over moderate heat until the curds begin to separate from the whey. Then drain the mixture into a colander lined with a double layer of gauze.   • Green onion – 1 small bunch
  • Parsley – 1 bunch
  • Salt, pepper, lemon juice - to taste

Cooking steps:

Boil the eggs for 7 minutes, then cool and remove the shells.

Wash the potatoes thoroughly and cook with their skins on. Cook for 20 minutes. Cool, peel off

Preparation:

  • Potatoes – 4
  • Fresh cucumber – 4

My first acquaintance with such a dish as okroshka was not very successful. It might even be completely unsuccessful. My mother and I were passing through visiting a distant relative, and she treated us to a pitiful semblance of real okroshka. This okroshka contained only potatoes, boiled carrots and sausage, seasoned with water and mayonnaise.

I tried the real, most delicious okroshka in one of the restaurants in our city. It was okroshka with whey and sour cream. I’ve never eaten tastier okroshka in my life! Just for fun, I tried okroshka with kefir, chicken broth, and mineral water, but okroshka with whey and sour cream is the most delicious!

Since then, I always cook whey-based okroshka with meat for my family. I add a lot of herbs, lemon juice, and of course, sour cream.

Since I’m preparing a large portion, I don’t pour the whey over the entire okroshka at once, but mix it directly in the plate. “In dry form” the okroshka is better preserved, whereas if all the ingredients are poured with whey at once, the next day the cucumbers in the okroshka become soft and begin to sour. These cucumbers taste like snails.

By the way, they do exactly the same thing in restaurants. Nobody cooks okroshka in a five-liter saucepan, unless it’s a set lunch.   • Pork (fillet) 0.5 kg.
  • Boiled potatoes in jackets 4-5 pcs.

How to prepare okroshka with whey:

Pre-boil the meat, check that it is soft, and chop finely.

We peel the potatoes and chop them finely, as for Olivier. I use a vegetable mesh to cut potatoes – it’s quick and easy.

We also chop the eggs.

Slice the cucumbers.

With radishes it's not so simple. It takes a long time to cut with a knife, the mesh doesn’t take it, so it’s best to use a blender.

Be careful not to overdo it so you don't end up with a puree. 3-4 presses of the blender button are enough.

Dry chopped radishes store very poorly. Within a couple of hours it will turn yellow and become bitter. Therefore, if you are making a large portion of okroshka and will not pour the whey all at once, you will have to chop the radishes each time before serving.

If you make a small portion of okroshka (1-2 times), then you can safely pour the whey over the radishes.

Mix all ingredients for 1 serving in a plate, add greens.

Pour in whey, salt, add lemon juice to taste, and a spoonful of sour cream.

Heat affects our diet. Few people now ask for hot soup to warm up, as they did in winter. I want to drink something cold more, preferably kvass! Besides, no one wants to stand at the stove for a long time in the heat. It's time for cold soup - okroshka.

The name of this dish comes from the verb to crumble, chop finely, and reflects the process of its preparation: finely chopped ingredients are poured with cold, non-sweet dressing. For example, kvass, kefir or whey. Nowadays, they still use mineral water with sour cream for this dish. Sometimes it is called liquid Olivier :)

If you buy food at the market, keep in mind that very fresh eggs will be difficult to peel, be sure to put them in cold water after boiling. Eggs from supermarkets usually have time to “age” before they are packaged and delivered to the store, but it’s still better to keep them in cold water too.

2. Boil the potatoes, peel them and chop them finely. If you have new potatoes, they are also suitable for this dish.

3. Finely chop the boiled sausage. In fact, you can use sausages, sausages, ham and even smoked sausage, it all depends on your gastronomic preferences, but more on that in other recipes.


4. Cut the cucumbers into cubes. If it’s not the season for garden vegetables yet or you don’t trust sellers well, you can soak the cucumbers in salt water. To do this, cut off the “butts” of the cucumbers and leave them in cold salted water for an hour. You can also cut off the peel of cucumbers to be more sure. If there are yellow spots under the peel, then they contain a lot of nitrates. It is dangerous to eat such fruits.

If you have homemade cucumbers, you don’t need to soak or peel them.

5. Wash the greens and chop them finely. Mash some of the chopped greens to extract the juice.

6. Mix all chopped ingredients in one bowl. Without dressing in the refrigerator, the okroshka preparation will keep well for 1-2 days.


7. Before serving the finished dish, add whey, salt, and sour cream to the dry ingredients to taste. Stir and enjoy. Bon appetit, stay healthy!

Recipe with sausage and radishes

Radishes are an invariable ingredient in classic okroshka. Not everyone, of course, loves it, but this does not in any way affect its beneficial properties for the body.

Radishes perfectly stimulate the appetite, help improve intestinal motility, and improve digestion. Thanks to the presence of fiber, it reduces the level of bad cholesterol in the blood and removes toxins from the body. Invigorates! By the way, radish leaves contain no less useful microelements and vitamins than the root vegetable. You can add them as greens to okroshka or some other salad.


But if you have problems with the gastrointestinal tract, choose recipes without radishes.

To prepare we will need:

  • Whey – 1 liter
  • Boiled or smoked meat – 200 gr.
  • Eggs – 4 pcs.

1. Finely chop the greens and place in a bowl.

Secret: in order for the okroshka to have a bright and rich smell, you need to add salt and sugar to the greens and lightly crush it with a mortar until the juice is released.


2. Boil potatoes and eggs. Home-cooked eggs add a bright yellow color and nutritional value to this dish.

3. Finely chop the cucumbers, radishes and potatoes and mix in a bowl. Radishes can be grated, it will be tasty and juicy.

4. Cut the eggs. We separate the whites and yolks in different directions. Finely chop the protein and add it to the bowl with the rest of the ingredients. Grind the yolks with mustard and sour cream, i.e. make a sauce for dressing okroshka.

Cooking whey-based okroshka with chicken

This recipe is for those on a diet. In fact, if you remove potatoes, then all other foods do not lead to weight gain. And you won’t even notice the absence of potatoes.

Instead of traditional boiled sausage, we will use chicken breast. You can use vinegar, or you can use lemon juice or lemon slices, or citric acid. If the whey is acidic, then no acid needs to be added at all.

2. Finely chop the ingredients and mix in a bowl. If everything is cut into cubes of the same size, the okroshka looks even more appetizing.


3. The radish can be grated, then its taste will be felt more vividly in the okroshka and this will add variety to your dish.


4. We don’t add salt to the cuts, otherwise the vegetables will release juice, and we don’t plan to eat such a large amount at one time.

5. Before serving, add dressing to the plate. To do this, mix whey, sour cream, vinegar or lemon juice and salt.

6. Pour in the dressing, let it brew for 1 hour and treat your loved ones with a dietary vitamin dish. Traditionally, you want to eat this dish cold, but it’s better to warm it to at least room temperature. Otherwise, our stomach will have to heat the food on its own so that it is well digested.

3. Cut sausage, potatoes, cucumbers, whites, radishes into cubes of the same size and mix in a bowl. Add the mashed yolks with herbs here, mix and add salt.


4. To prepare homemade mayonnaise, beat 2 raw eggs in a blender.

You can pre-cook (boil) the eggs for 1 minute to treat them thermally. In one minute the protein will not have time to coagulate. Immediately transfer the eggs from boiling water to cold water to stop the process of protein coagulation.

Add 1 teaspoon of salt, 0.5 teaspoon of sugar, 1.5 teaspoon of dry mustard to the eggs, beat with a blender. Add 1 tbsp. spoon of lemon juice.     To prepare okroshka, you can use either purchased whey or homemade whey. In this case, we will focus on the last option.

    So, you should prepare the whey in advance, since this process is somewhat lengthy.

    First of all, let's freeze the kefir. Then place it on gauze folded in four. It is better to place the gauze in a colander, and the colander itself in the pan. After this, leave our kefir overnight at room temperature.

    During this time, the whey will separate and drain into the pan. Only cottage cheese will remain in the gauze. It can be used in the future to prepare another dish.

    Once the whey is ready, it should be refrigerated.

    Now let's start preparing all the other components. Boil the eggs hard, cool them, peel them and cut them into small cubes (the smaller the better).

    Now let's take care of the cucumbers. They must first be washed and then cut. If the peel is bitter, the cucumbers must first be peeled.

    After the cucumbers are chopped, they should be placed in a bowl with the eggs.

    Let's prepare the potatoes. Boil it in its skins and then remove the skin. After this, the potatoes should be cut into small cubes.

    Let's deal with the meat component of our first course. In this case, we will use boiled sausage, although it can be replaced with any other boiled meat. So, cut the sausage and also add it to the bowl with the rest of the okroshka ingredients.

    Wash the green onion with tap water, then chop it finely and put it in okroshka.

    Just as we did with green onions, we will do with dill.

    At this stage, you should mix all the ingredients well and season them with our homemade whey, sour cream and lemon juice.

    Before serving whey-based okroshka, cool it!

    It is best to serve whey-based okroshka with sausage, garnished with a sprig of herbs.
